Strawberry Fool
Softly whipped cream folded with a quick strawberry and lime compote.
Ingredients
- 250 ml ANDFOODS Cream
- 150 g strawberries
- 30 g caster sugar
- 15 ml lime juice
Method
- Chop the strawberries and place in a saucepan with the sugar and lime juice.
- Cook gently until softened and slightly syrupy. Cool completely.
- Whip the chilled cream to soft peaks.
- Fold the strawberry mixture through the cream, leaving some swirls.
- Spoon into glasses and refrigerate until serving.
